Chick Pea And Mint Rice
|Rice||1 Cup (16 tbs), washed and soaked|
|Boiled chickpeas||1⁄2 Cup (8 tbs) (Kabuli Chana)|
|Chopped mixed vegetables||1⁄2 Cup (8 tbs) (French Bean Carrots, Peas)|
|Sliced onion||1⁄2 Cup (8 tbs)|
|Chopped garlic||1⁄2 Teaspoon|
|Bay leaf||1 (Tej Patta)|
|Chopped mint||1⁄4 Cup (4 tbs)|
|Lemon juice||1⁄2 Teaspoon|
Heat the oil in a non-stick pan, add onions, garlic and bay leaf and cook the onions are soft.
Add the vegetables, rice.
2 cups water and salt and cook over medium flame till the rice is partially cooked.
Add the chick peas, mint and lemon juice.
Mix well and cook covered over low flame
