Ingredients
  Dried chick peas 1 Cup (16 tbs)
  Water 1 3⁄4 Cup (28 tbs)
  Salt 1 Teaspoon
  Onion 1 , chopped
  Salt pork piece 1 Small (Small Sized Chunk)
  Bacon drippings 2 Tablespoon
  Ground red chili 1⁄4 Cup (4 tbs)
  Comino 1 Pinch
  Mexican oregano 1 Pinch
  Cilantro 1 Pinch
Directions

1 Soak the chick-peas in water overnight. Drain, discard soaking water and add fresh water to cover. Add the salt and bring to a boil. Simmer until tender, 1 to 2 hours.
2 When the chick-peas are tender, fry the onion and salt pork in the bacon drippings in a small frying pan until onion is translucent.
3 Add onion, salt pork, chile and seasonings to the chick-peas and simmer together slightly before serving.
