Puree Of Chick Peas
|Chickpeas||18 Ounce (1 Tin, 500 Gram)|
|Olive oil||120 Milliliter (8 Tablespoons)|
|Garlic||3 Clove (15 gm)|
|Parsley sprigs||5 , coarsely chopped|
1. In a large saucepan, bring some salted water to the boil. Open the tin of chick peas and drain. Plunge the chick peas into the water, cook for 2 minutes and drain.
2. Peel and crush the garlic. Mash the chick peas with a fork or puree them in a liquidizer. Place them in a bowl and add the olive oil, a little at a time, using a whisk. Add the garlic, mix well and leave to cool.
3. Before serving, sprinkle with the parsley and garnish with lemon wedges.
