Chickpea And Rice Dinner

Ingredients
  Olive oil 1 Tablespoon
  Onion 1 , finely chopped
  Garlic 1 Clove (5 gm), smashed and chopped
  Celery stalk 1⁄2 , diced
  Green pepper 1 , diced
  Tomatoes 3 , peeled and diced
  Basil 1⁄2 Teaspoon
  Thyme 1⁄4 Teaspoon
  Chopped fresh parsley 1 Tablespoon
  Canned chickpeas 19 Ounce, drained (1 can)
  Cooked rice 4 Cup (64 tbs) (4 portions)
Directions

Heat oil in saute pan over medium heat. Add onion, garlic and celery. Cook 5 minutes over low heat.
Add green pepper, tomatoes and seasonings. Cook 12 minutes over medium heat.
Add chickpeas, mix and simmer 4 minutes.
Serve with rice.
