Simple but truly delicious this Chicken Smothered Zucchini recipe is definitely worth your time and effort. Quite simple to make using the very basic set of ingredients, the taste this Chicken Smothered Zucchini gives out is simply fabulous. I love it and so I want you to try this too.
Ingredients
  Fryer chicken 1 Small, cut up
  Vegetable oil 2 Tablespoon
  Zucchini 2 Medium
  Chicken liver 1
  Butter 1 Tablespoon
  Garlic salt 1 Pinch
  Fresh tarragon 1 Teaspoon, chopped
  Rice 2 Cup (32 tbs), cooked and buttered
  Salt To Taste
  Pepper To Taste
Directions

Cut up fryer; set liver aside.
Season fryer to taste; brown in oil in dutch oven.
Cover and cook very slowly for 35 minutes.
Slice zucchini; add to chicken.
Cover again and cook slowly for 10 minutes, stirring carefully from time to time.
Saute chopped chicken liver in butter; sprinkle it with garlic salt.
Add to chicken; stir gently.
Sprinkle with chopped tarragon.
Serve on hot buttered rice.
