Mrs. Pitre's Chicken Smothered Zucchini
|Fryer chicken||1 Small, cut up|
|Vegetable oil||2 Tablespoon|
|Garlic salt||1 Pinch|
|Fresh tarragon||1 Teaspoon, chopped|
|Rice||2 Cup (32 tbs), cooked and buttered|
Cut up fryer; set liver aside.
Season fryer to taste; brown in oil in dutch oven.
Cover and cook very slowly for 35 minutes.
Slice zucchini; add to chicken.
Cover again and cook slowly for 10 minutes, stirring carefully from time to time.
Saute chopped chicken liver in butter; sprinkle it with garlic salt.
Add to chicken; stir gently.
Sprinkle with chopped tarragon.
Serve on hot buttered rice.
