Authentic Sweet And Sour Chicken
|Soy sauce||2 Tablespoon|
|Chicken breasts||2 , halved, skinned, boned, cut into bite size cubes|
|Vegetable oil||1 Tablespoon|
|Cucumber||1 , scored lengthwise with tines of fork, cut into bite size cubes|
|Cantaloupe||1⁄2 , seeded, rinded, cut into bite size pieces|
|Sweet red pepper/Green pepper||To Taste, cubed|
|Brown sugar||2 Tablespoon|
|Pineapple juice||1⁄2 Cup (8 tbs) (Unsweetened)|
|Cornstarch||1 Tablespoon (In 2 Tablespoons Cold Water)|
|Blanched almonds||3 Ounce|
Combine soy sauce and cornstarch.
Coat chicken pieces thoroughly.
Heat oil in large frypan (or wok); stir-fry chicken 3 to 4 minutes.
Add cucumber, cantaloupe, and pepper.
Mix together sauce ingredients; add to chicken mixture.
Heat, stirring often, until sauce boils and ingredients are heated through.
