Chicken With Apricots
|Broiler fryer chicken||3 Pound|
|Soy sauce||2 Tablespoon|
|Vegetable oil||1 Tablespoon|
|Chili sauce||1 Tablespoon|
|Ground ginger||1⁄2 Teaspoon|
|Cayenne pepper||1⁄8 Teaspoon|
|Apricot halves||1 Can (10 oz) (In Juice, Drained)|
Cut chicken into pieces; cut each breast half into halves and remove skin.
Arrange chicken with thickest parts to outside edges in microwavable dish, 12 X 7 1/2 X 2 inches.
Mix remaining ingredients except apricots; brush over chicken, turning pieces to coat.
Cover tightly and microwave on high 10 minutes.
Brush with the liquid mixture; rotate dish 1/2 turn.
Cover and microwave until thickest pieces are done, 6 to 10 minutes longer.
Arrange apricots around chicken; brush chicken and apricots with the liquid.
Microwave uncovered until apricots are hot, about 1 minute.
