Chicken, Broccoli And Grape Salad
|Broccoli florets||750 Milliliter (3 cups)|
|Diced cooked chicken||750 Milliliter (3 cups)|
|Black grapes||375 Milliliter, halved and seeded (1 1/2 cups)|
|Chopped celery||250 Milliliter (1 cup)|
|Bibb lettuce head||1|
|For orange yogurt dressing|
|Plain yogurt||250 Milliliter (1 cup)|
|Liquid honey||25 Milliliter (2 tablespoon)|
|Grated orange rind||1 Teaspoon|
|Toasted sunflower seeds||50 Milliliter, toasted (1/4 cup, for garnish)|
In pot of boiling water, cook broccoli until tender crisp.
Drain, rinse under cold running water and drain thoroughly.
In large bowl, combine broccoli, chicken, grapes and celery.
Fold gently to mix.
Line salad bowl with bibb lettuce leaves; fill with chicken mixture.
Alternatively, spoon salad into individual lettuce cups.
Orange Yogurt Dressing: In small bowl, blend together yogurt, honey and orange rind.
Just before serving, drizzle over chicken salad.
Garnish with sunflower seeds, if using.
