White Chicken

Ingredients
  Chicken 3 Pound (1 whole)
  Fat 2 Tablespoon
  Dry herbs 1 Tablespoon
  Salt pork slices 3
  Chicken stock 2 Cup (32 tbs)
  Flour 2 Tablespoon
  Milk/Cream 1 Cup (16 tbs)
  Egg yolk 1
  Cooked rice/Dumplings 2 Cup (32 tbs) (adjust quantity as needed)
Directions

GETTING READY
1.Start by singeing, cleaning, and cutting up the chicken
MAKING
2.In a pan, brown the chicken with fat
3.In a pot, cover the chicken with boiling water
4.Add salt, pepper, herbs and salt pork
5.Now simmer for 1 hour, or until tender
6.Strain the chicken and thicken 2 cups of liquid with flour mixed to a smooth paste with a little cold water; add milk or cream beaten with yolk of egg
7.Heat again until slightly thickened, pour over chicken
SERVING
8.Serve with rice or dumplings
