Chicken Or Turkey Mole Poblano I
|Mole poblano paste||8 Ounce (1 jar)|
|Canned tomato sauce||1 Cup (16 tbs)|
|Chicken stock/Water||1 Cup (16 tbs)|
|Diced cooked chicken/Turkey||3 Cup (48 tbs)|
Blend mole paste, tomato sauce, and stock in a large saucepan.
Heat to boiling; add sugar and salt to taste.
Stir in chicken.
Simmer about 10 to 15 minutes, stirring occasionally, to blend flavors.
To use as a tamale filling, the sauce must be fairly thick, so may be simmered until of desired consistency.
Then spoon poultry pieces and sauce onto tamale dough spread on corn husk; use leftover sauce to serve over cooked tamales.
Or, Chicken or Turkey Mole Poblano may be served over hot rice.
