Chicken With Pork Tripe

Ingredients
  Pork tripe 1
  Salt 1 Tablespoon
  Chicken 2 Pound (1 whole)
  Ginger slices 2
  Scallion stalks 2
  Water 6 Cup (96 tbs)
Directions

Wash the pork tripe well and soak in cold salty water for an hour.
Remove from the water and rinse it well.
Discard the water.
Place the chicken in a heavy saucepan with tripe, ginger, scallions and water.
Bring to a boil, lower the heat and simmer for 3 hours.
Cut the tripe into strips 2 inches by 1 inch and place in a deep bowl.
Transfer the chicken with the soup carefully (as it will come apart at a touch of the chopsticks) to the bowl.
Serve with side dishes of thick imported soy sauce.
