Potted Applejack Chicken
|Whole chicken breasts||4 , split and boned|
|Sliced tart apples||1 1⁄2 Cup (24 tbs)|
|Cream||1 Cup (16 tbs)|
Soak chicken in applejack for several hours, then drain and reserve the booze.
Saute chicken in butter till brown; remove and saute apples briefly, adding more butter if needed.
Splash in some of the reserved applejack to lift brown bits.
Add cream and blend, season to taste and return chicken to pan.
If you want to add the rest of the applejack, do so.
Cook slowly for at least an hour in a 300 Â° oven or an electric skillet.
The oven makes it look more atractive.
Can be kept warm at a very low heat, covered for quite a while.
