Brandy-Fired Fried Chicken
|Fryers||3 Small, split|
|Apple brandy||1⁄2 Cup (8 tbs)|
|Chopped olives||1⁄4 Cup (4 tbs)|
|Chopped savory/Chopped thyme / oregano||1 Tablespoon|
|Chopped parsley||1 Tablespoon|
|Freshly ground pepper||To Taste|
|White wine||1 Cup (16 tbs)|
Brown chicken in butter in very heavy skillet.
Cook slowly 20 minutes, turning occasionally.
Place in large warm casserole.
Gently warm brandy in open saucepan.
Touch a match to it.
When flaming, pour over chicken.
Add olives and seasonings.
When blaze has gone, pour wine over chicken.
Cover, bake in a 325 to 350 degreeoven for 1 hour.
