Ingredients
  Chicken meat 3⁄4 Pound, diced
  Salt 1 Teaspoon
  Cornstarch 1 Teaspoon
  Sherry 2 Teaspoon
  Oil 1⁄2 Cup (8 tbs)
  Vegetable paste 3 Teaspoon (Hoisin)
  Mushrooms 2 , soaked and diced
  Green peppers 2 Small, diced
  Red chili 1 , diced
  Bamboo shoot 1 , diced
Directions

Mix the salt, cornstarch and sherry together and coat the chicken with it.
Heat a pan, add half of the oil and when it is very hot saute the chicken for 2 minutes.
Remove the chicken and drain it.
Reheat the pan and add the remainder of the oil.
Saute the vegetable paste for 1 minute and then add the mushrooms, peppers, chili and bamboo shoot and saute for another minute.
Add the chicken, and stir well into the mixture for 1 minute or till the chicken becomes hot.
Remove from the heat and serve immediately.
