Deep-Fried Chicken

Ingredients
  Chicken 2 Pound
  Water 3 Cup (48 tbs) (To Cover Chicken Properly)
  Oil 2 Cup (32 tbs) (For Deep Frying)
  Ginger slice 1
  Scallion stalk 1 , cut in 1 inch sections
For marinade
  Sherry 3 Teaspoon
  Soy sauce 5 Teaspoon
  Cornstarch 3 Teaspoon
Directions

Place the chicken in a saucepan and add enough water to cover.
Bring to a boil, turn down the heat and simmer for about 1 hour.
Remove chicken from the broth and bone it, cutting the meat into shreds about 2 inches long, and allow it to cool.
Coat the chicken with the marinade and allow it to stand for a few minutes.
Heat a pan and add enough oil for deep frying.
Add ginger and scallions.
When this is hot, fry the pieces of chicken for about 1 minute or until brown and crisp.
Serve immediately.
