Boiled White Chicken
Place the chicken in a large saucepan and cover with water.
Add scallions and ginger and cover.
Bring the water to a boil, turn off the heat and let the chicken stand in the hot water for an hour.
Remove from the water and allow it to drain for about 15 minutes and put in the refrigerator before it has cooled.
When cold, cut the chicken up Chinese style and serve with side dishes of thick soy sauce.
