Finely dice 100 g 1/4 lb) cooked chicken meat.
Mix it with 30ml (2 tablespoons) fruit chutney, such as mango or apricot.
Add 15 ml (1 tablespoon) chopped canned red pepper (pimento) arid 15 ml (1 tablespoon) mayonnaise; mix well.
Stir in a few drops of chilli sauce, and spoon the mixture into bouchee cases.
