|Boneless skinless chicken breasts||8|
|Chicken broth||1⁄4 Cup (4 tbs)|
|White wine||1⁄4 Cup (4 tbs)|
|Garlic||30 Clove (150 gm), peeled|
|Red bell peppers||2 , thinly sliced|
|Crumbled feta cheese||1 Tablespoon|
Rinse the chicken and pat dry.
Brown the chicken lightly in a little olive oil, or grill slightly; do not allow chicken to cook through.
Arrange the chicken in a glass 9xl3 inch baking dish.
Drizzle the broth and wine over the chicken.
Arrange the garlic around the chicken pieces.
Bake, covered tightly with foil, at 325 degrees for 25 minutes.
Open the foil and layer the bell peppers over the chicken.
Season with salt and pepper.
Cover with foil again.
Return to the oven and bake for 20 minutes longer.
Remove the foil.
Sprinkle with feta cheese and return to the oven for 1 minute.
Serve with white rice.
