Batter Fried Chicken
|Broiler fryer||3 , cut into serving pieces|
|Water||1⁄4 Cup (4 tbs)|
|Salad oil||1 Quart (For deep frying)|
|Batter||2 Cup (32 tbs)|
Place chicken pieces in baking pan; add water and sprinkle with salt.
Cover with foil; bake in moderate oven (375Â°) 45 minutes.
Remove chicken pieces from liquid; dry well.
If desired, remove skin.
Heat salad oil to 350Â° in a heavy 3 quart saucepan.
Dip chicken pieces in Batter; drain off excess.
Fry, 2 or 3 pieces at a time, until golden brown, about 3 minutes.
Drain on paper towels.
