Chicken On A Spit
|Ready mix bread stuffing||2 Cup (32 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), melted|
|Water||2⁄3 Cup (10.67 tbs)|
|Currant jelly||1⁄2 Cup (8 tbs), melted|
Prepare stuffing mix with 1/3 cup of the melted butter or margarine and water, following label directions on package.
Wash chicken, then dry.
Stuff neck and body cavities lightly; skewer neck skin to body; secure body cavity closed and tie legs tightly to tail.
Place chicken on spit; brush with remaining butter or margarine.
Set spit in position over hot coals; start spit turning.
Roast 1 hour; brush with melted jelly.
Continue roasting, brushing often with more jelly, 15 minutes longer, or until chicken is tender and richly glazed.
