Skillet Chicken Dinner
|Vegetable cooking spray||1 Tablespoon|
|Chicken drumsticks||8 , skinned|
|Sweet potatoes||1 Pound, peeled and cut into 0.75-inch slices|
|Chopped celery leaves||1⁄3 Cup (5.33 tbs)|
|Pineapple juice||1 Cup (16 tbs)|
|Green pepper||To Taste, cut into strips|
|Frozen english peas||2 Cup (32 tbs)|
Coat a large skillet with cooking spray, place over medium heat until hot.
Brown chicken on all sides.
Add sweet potatoes and next 4 ingredients, bring to a boil.
Cover, reduce heat, and simmer 20 minutes.
Add green pepper and English peas, cover and cook 8 minutes or until crisp-tender.
Remove bay leaf.
