Chicken Provencale

The chicken provencale is a roaste dpreparation made with chicken flavored with white wine. Cooked in the oven with apples, tomatoes, black olives and curry powder, the chicken provencale can be served with a side salad and is quite savory and very flavorful. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
  Chicken pieces 1 1⁄4 Kilogram
  White wine 1⁄2 Cup (8 tbs)
  Canned peeled tomatoes 425 Gram
  Onion 1 Large, chopped
  Apple 1 , peeled and chopped
  Black olives 1⁄2 Cup (8 tbs)
  Curry powder 1 Teaspoon
  Button mushrooms 250 Gram
  Chopped parsley 1 Tablespoon
Directions

Preheat oven to 200°C.

In a large jug combine wine, tomatoes, onion, apple, olives and curry powder, Mix well.

Arrange chicken pieces in a casserole dish.
Pour over sauce.
Cover and cook for 35 minutes on HIGH MIX/ROAST 200°C.

Add mushrooms and return to oven and cook for a further 5 minutes.
5.
Sprinkle with parsley.
