Apple Chicken And Rice
|Chicken||3 Pound, cut into serving pieces|
|Onion||1 Large, chopped|
|Apple||1 , cored and quartered|
|Rice||1 Cup (16 tbs)|
|Apple juice||1 1⁄2 Cup (24 tbs)|
|Heavy cream||1⁄4 Cup (4 tbs)|
|Parsley||1 (For Garnish)|
Season the chicken pieces liberally with salt and pepper.
Heat the shortening in cooker.
Brown the onion and chicken.
Add apple, rice, and apple juice.
Put pressure regulator in place.
When pressure is reached, cook 15 minutes.
Allow the cooker to cool normally.
Return open cooker to a low heat and add the cream.
Stir gently to mix and heat.
Garnish with parsley, and serve at once.
