The Apple Chicken And Rice dish is a meal in itself. This well flavored and unique rice dish is a personal favorite. Try this wonderful Apple Chicken And Rice recipe!
  Chicken 3 Pound, cut into serving pieces
  Shortening 2 Tablespoon
  Onion 1 Large, chopped
  Apple 1 , cored and quartered
  Rice 1 Cup (16 tbs)
  Apple juice 1 1⁄2 Cup (24 tbs)
  Heavy cream 1⁄4 Cup (4 tbs)
  Parsley 1 (For Garnish)
  Salt To Taste
  Pepper To Taste

Season the chicken pieces liberally with salt and pepper.
Heat the shortening in cooker.
Brown the onion and chicken.
Add apple, rice, and apple juice.
Close cover.
Put pressure regulator in place.
When pressure is reached, cook 15 minutes.
Allow the cooker to cool normally.
Return open cooker to a low heat and add the cream.
Stir gently to mix and heat.
Garnish with parsley, and serve at once.
