Chicken, Nuts, And Pineapple
|Fryer||3 Pound, disjointed (1 Unit)|
|Water||3 Cup (48 tbs)|
|White pepper||1⁄4 Teaspoon|
|Shredded chinese cabbage/Green cabbage||1 Cup (16 tbs)|
|Diced celery||1⁄2 Cup (8 tbs)|
|Macadamia nuts/Brazil nuts||3⁄4 Cup (12 tbs), chopped|
|Soy sauce||2 Tablespoon|
|Drained pineapple chunks||1 Cup (16 tbs)|
Combine the chicken, water, onion, salt, and pepper in a saucepan.
Bring to a boil and cook over low heat 35 minutes or until tender.
Remove chicken; strain and reserve broth.
Cut the chicken into pieces and discard bones.
Heat the oil in a deep skillet, saute the cabbage, celery, and chicken for 3 minutes.
Stir in the nuts, soy sauce, sugar, and 2 cups broth.
Cover and cook over medium heat 5 minutes.
Add the pineapple, cook 3 minutes longer.
