Roast Chicken with Grapes
|Broiler fryer chicken||3 Pound|
|Lemon juice||1 Tablespoon|
|Grated lemon peel||1 Teaspoon|
|Seedless grapes||1 1⁄2 Cup (24 tbs)|
|Dry white wine||1⁄3 Cup (5.33 tbs)|
Wash chicken and pat dry.
Rub with lemon juice and sprinkle with salt, pepper, and paprika.
Place on a roasting pan and stuff the cavity with the whole grapes.
Roast in a 400Â° oven for 20 minutes; reduce heat to 325Â° and roast 1 to 1 1/4 hours longer, or until the drumstick moves easily, basting several times with wine and drippings.
Carve and serve grapes alongside.
Pass pan juices skimmed of fat.
