Golden Parsleyed Chicken
|Broiler fryer chicken||2 1⁄2 Pound|
|Crackers||1 1⁄3 Cup (21.33 tbs), finely crushed (Round Buttery)|
|Dried parsley||2 Tablespoon|
Cut chicken into pieces; cut each breast half into halves.
Beat egg and water.
Mix cracker crumbs, parsley, salt and pepper.
Dip chicken pieces into egg mixture, then coat with crumbs.
Arrange chicken skin sides up and thickest parts to outside in oblong baking dish, 12 x 7 /2 x 2 inches.
Cover loosely and microwave until done, 20 to 25 minutes.
