Stir Fried Chicken With Lemongrass

  Chicken 1 Pound
  Minced garlic 2 Clove (10 gm)
  Lemongrass 1
  Galangal 2
  Kaffir lime 2
  Tomato slice 1 Cup (16 tbs)
  Chicken stock 1⁄2 Cup (8 tbs)
  Fish sauce 1 Tablespoon
  Oyster sauce 1 Tablespoon
  Sugar 1 Teaspoon

Medium heat the frying pan. Add oil to the pan. Add garlic. Cook for a few seconds. Add chicken. Cook for a minute or two. Drain off fat if you wish. Add kaffir lime leaves, galangal, and lemongrass to the chicken. Cook for a minute. Add chicken stock. Add fish sauce. Add oyster sauce. Add sugar to the pan. Add tomatoes. Stir well. Lower the heat. Cover the pan with a lid. Let it cook for 10-12 minutes. Stir well. Enjoy !
