Marinated Chicken In A Sandwich

Ingredients
  Chicken breast halves 8 , skinned and boned
  Soy sauce 1 Cup (16 tbs)
  Pineapple juice 1⁄2 Cup (8 tbs)
  Sherry 1⁄4 Cup (4 tbs)
  Firmly packed brown sugar 1⁄4 Cup (4 tbs)
  Minced fresh garlic 3⁄4 Teaspoon
  Monterey jack cheese slices 8
  Kaiser rolls 8 , sliced in half horizontally
  Mustard sauce 4 Tablespoon (adjust quantity as needed)
  Leaf lettuce 1
Directions

Place chicken in a large shallow dish.
Combine soy sauce, pineapple juice, sherry, brown sugar, and garlic, mixing well.
Pour over chicken, and let marinate for about 30 minutes.
Remove from marinade.
Grill chicken breasts over hot coals 25 minutes or until done, turning and basting with marinade approximately every 5 minutes.
Place slice of cheese on each chicken breast, and grill an additional 3 minutes or until cheese melts.
Remove chicken from grill.
Spread each side of rolls with mustard sauce, place chicken breast on bottom half of each roll; top with lettuce.
Cover with roll top, and serve sandwich immediately.
