Curried Chicken Layer
|Chicken broth||1 1⁄3 Cup (21.33 tbs)|
|Curry powder||2 Teaspoon|
|Fresh lemon juice||1 1⁄2 Teaspoon|
|Mayonnaise||3⁄4 Cup (12 tbs)|
|Cooked chicken||2 Cup (32 tbs), minced|
|Scallions||1⁄4 Cup (4 tbs), chopped|
Sprinkle gelatin over chicken broth; stir in curry powder.
Let stand a few minutes.
Set liquid over low heat and stir until gelatin dissolves.
Remove from heat; stir in lemon juice.
Cool until mixture begins to thicken slightly.
Fold in mayonnaise, chicken and scallions.
Cool thoroughly, then spoon over pineapple layer.
