Chicken Breast Delight
|Chicken half breast||3|
|Milk||8 Cup (128 tbs)|
|Rice flour||1 1⁄2 Cup (24 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Strawberry jam||1 Tablespoon|
|Ice cream||1 Cup (16 tbs)|
Cover breasts with water.
Take the foam out with a spoon.
Reduce heat and simmer until cooked.
Remove skin, bones and black membrane.
Shred the meat into very small pieces with your fingers.
Do not use knife.
Wash under cold water.
Add two cups milk to the shredded meat.
Cook beating and stirring constantly for about twenty minutes.
Melt rice flour in two cups milk.
Add sugar, stir to dissolve.
Heat four cups of milk.
Take off the heat, add melted rice flour mixture.
Stir and cook slowly until a little thickened.
Add chicken mixture, cook together until thickened. (Must be of pudding consistency).
Before serving, beat the pudding in food processor or a blender a batch at a time.
If it is too thick, add a little milk.
Serve in cups, decorate with strawberry jam or ice cream, and sprinkle with cinnamon.
