Chicken Au Province
|Finely chopped onion||1 Tablespoon|
|Salad oil||1 Cup (16 tbs)|
|Garlic||1 Clove (5 gm)|
|Canned tomatoes||3 Cup (48 tbs)|
|Sliced mushrooms||1⁄2 Cup (8 tbs)|
|Chopped green peppers||1⁄2 Cup (8 tbs)|
Cut chicken into pieces suitable for serving.
Roll in flour and brown on all sides in the salad oil to which the cut clove of garlic has been added.
Add mushrooms, green peppers, onion, tomatoes, salt and pepper.
Cover tightly and simmer gently until chicken is very tender.
The garlic may be removed after frying the chicken if desired.
Serve with a gravy made from the drippings in the pan.
