Mock Fried Chicken

This Mock Fried Chicken tastes as good or even better than Fried Chicken. Try out this Mock Fried Chicken for lunch today and feel free to comment on it here!
Ingredients
  Chicken 3 Pound
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Onions 2 Large
  Water 12 Cup (192 tbs)
Directions

Put chicken pieces skin-side-down into a large, heavy skillet.
Sprinkle chicken with salt and pepper, put onion slices on top.
Cover skillet, cook chicken over low heat 30 minutes.
Tilt lid of skillet slightly to allow liquid to evaporate as it continues to cook slowly another 20 minutes.
Chicken will be tender and golden.
Remove chicken to a heated platter.
Put onions back in open skillet with the water.
Stir together for several minutes, until onions darken and absorb the liquid.
Spoon this over chicken, serve.
