Crispy Oven-Fried Chicken
|Rice cereal||1 Cup (16 tbs)|
|Buttermilk baking mix||1⁄4 Cup (4 tbs)|
|Instant onion||1 Tablespoon|
|Garlic powder||1⁄4 Teaspoon|
|Seasoned salt||1⁄4 Teaspoon|
|Broiler fryer||3 1⁄2 Pound|
|Vegetable cooking oil spray||1|
Combine egg and water in a shallow bowl; mix well, and set aside.
Combine crushed cereal, baking mix, minced onion, garlic powder, seasoned salt, and pepper in a shallow bowl; stir until well blended, and set aside.
Trim excess far from chicken; dip chicken in egg mixture, and dredge in cereal mixture, coating well.
Arrange chicken in a 15- x 10- x 1-inch jellyroll pan coated with cooking spray.
Bake, uncovered, for 1 hour or until render.
Transfer to a serving platter, and garnish with green onion fans and carrot flowers, if desired.
