Fourth Of July Chicken
|Broiler fryer chicken||3 Pound, cut into serving-size pieces|
|Flour||1 Cup (16 tbs)|
|Salt||2 1⁄2 Teaspoon|
|Onion salt||1⁄2 Teaspoon|
|Shortening||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
Dip each piece of chicken in flour mixed with salt and onion salt.
Brown, a few pieces at a time, in hot shortening in a large, heavy skillet.
Pile all chicken pieces in the skillet, lower heat, and cook, covered, 35 to 40 minutes, turning frequently.
Add water and cover pan again.
Cook another 15 minutes, or until liquid has been absorbed.
Drain chicken pieces on paper toweling and cool until ready for the picnic hamper.
