Curried Chicken Leftover
|Precooked rice||3⁄4 Cup (12 tbs)|
|Chopped red apple||1⁄2 Cup (8 tbs)|
|Diced cooked chicken/6 ounce canned boned chicken, diced||1 Cup (16 tbs)|
|Toasted slivered almonds||1⁄4 Cup (4 tbs)|
|Grated onion||1 1⁄2 Teaspoon|
|Mayonnaise/Salad dressing||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1 Tablespoon|
|Curry powder||1⁄2 Teaspoon|
Cook rice in a small saucepan, following label directions; cool to room temperature.
Combine with apple, chicken, almonds, onion in a medium-size bowl.
Blend remaining ingredients in a cup; stir into rice mixture; chill.
Just before serving, garnish with red apple slices, if you wish.
