Chicken And Vegetable Stir Fry
|Boneless chicken tenders||1 Pound|
|Red bell pepper||1 , julliened|
|Shallot||1 , minced|
|Yellow squash||1 , jullienned|
|Zucchini||1 , jullienned|
|Roasted garlic oil||2 Tablespoon|
|Seasoning/Mix together 1 garlic clove, 1 tsp lemon juice, parsley and some garlic powder (optional)||To Taste|
Directions for preparation:
• Heat 1 tbsp of roasted oil.
• Add the chicken tenders and sauté for 3-4 minutes. (Take more time if the pieces are large and thick)
• Add seasoning of choice and the zuchhini, shallots, yellow squash and the red peppers.
• Sauté the vegetables for about 5 minutes, till they are crisp-tender.
• Serve hot!
