Ingredients
  Boneless chicken tenders 1 Pound
  Red bell pepper 1 , julliened
  Shallot 1 , minced
  Yellow squash 1 , jullienned
  Zucchini 1 , jullienned
  Roasted garlic oil 2 Tablespoon
  Seasoning/Mix together 1 garlic clove, 1 tsp lemon juice, parsley and some garlic powder (optional) To Taste

Directions for preparation:

• Heat 1 tbsp of roasted oil.
• Add the chicken tenders and sauté for 3-4 minutes. (Take more time if the pieces are large and thick)
• Add seasoning of choice and the zuchhini, shallots, yellow squash and the red peppers.
• Sauté the vegetables for about 5 minutes, till they are crisp-tender.
• Serve hot!
