Country Chicken Bake

  Chicken pieces 6
  All purpose flour 2 Tablespoon
  Chicken fat/Bacon fat 1 Tablespoon
  Hard cider/White wine 2⁄3 Cup (10.67 tbs)
  Bacon slices 4
  Onions 2 Large
  White bread slice 8
  Shredded suet 1 Cup (16 tbs)
  Dried thyme 1 Pinch
  Grated lemon rind 1⁄2 Teaspoon
  Egg 1
  Milk 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste

Dust the chicken portions with flour and brown on all sides in the fat.
Put the chicken portions in a greased ovenproof dish and pour in the cider or wine.
Chop the bacon coarsely .
Chop the onions finely , and mix with the bacon.
Discard the crusts and make the bread into crumbs .
Add the suet, thyme, lemon rind, salt, pepper, egg and milk and mix to a soft dough .
Add the onion and bacon and mix until just incorporated.
Cover the chicken with the dough.
Cover with a piece of foil and bake at 350°F for 2 hours.
Remove the foil and continue cooking for 15 minutes.
Serve with gravy
