Country Chicken Bake
|All purpose flour||2 Tablespoon|
|Chicken fat/Bacon fat||1 Tablespoon|
|Hard cider/White wine||2⁄3 Cup (10.67 tbs)|
|White bread slice||8|
|Shredded suet||1 Cup (16 tbs)|
|Dried thyme||1 Pinch|
|Grated lemon rind||1⁄2 Teaspoon|
|Milk||1⁄4 Cup (4 tbs)|
Dust the chicken portions with flour and brown on all sides in the fat.
Put the chicken portions in a greased ovenproof dish and pour in the cider or wine.
Chop the bacon coarsely .
Chop the onions finely , and mix with the bacon.
Discard the crusts and make the bread into crumbs .
Add the suet, thyme, lemon rind, salt, pepper, egg and milk and mix to a soft dough .
Add the onion and bacon and mix until just incorporated.
Cover the chicken with the dough.
Cover with a piece of foil and bake at 350Â°F for 2 hours.
Remove the foil and continue cooking for 15 minutes.
Serve with gravy
