Ingredients
  Sliced chicken breast 150 Gram
  Soybean oil 2 Tablespoon
  Thai green curry paste 2 Tablespoon
  Coconut cream 1⁄2 Cup (8 tbs)
  Coconut milk 1 Cup (16 tbs)
  Eggplant 1 Cup (16 tbs), cubed into small pieces
  Kaffir lime leaves 5 , stem removed and torn
  Thai fish sauce 2 Tablespoon
  Sugar 1 Teaspoon
  Sweet basil 1 Cup (16 tbs)
  Long red chillies 2
Directions

Heat the oil in a sauce pan over medium heat and add Thai green curry paste, stir regularly to prevent the paste from burning.

Add coconut cream, chicken and cook until fragrant.

Bring to a low boil then add eggplant, kaffir lime leaves, fish sauce, sugar then coconut milk.

Simmer until chicken is cooked then turn remove from stove and transfer into serving bowl.

Garnish with sweet basil leaves.
