Ah, labor day. Yes, last chance to play before it's back to workschoolweather change and I think that calls for a killer barbeque recipe for your last chance summer cookout. Of course since I have this recipe on my channel it will be healthy but I promise you it will taste really good.
So we are going to grill a light, spicy, and flavorful chicken breast!
Very tasty, light, and refreshing to have on your last days of Summer! Which brings me to my question for you today which was - what was the highlight of your summer? Mine was our Kid free weekend in vegas along with many weekends of long bike rides and hangin out with friends and family. But what was yours?
|Chicken breast||1 Medium , filleted|
|For the marinade|
|Jalapeno/Serrano peppers||2 Medium , diced|
|Garlic cloves||2 Medium , pressed|
|Squeezed lemon juice||1/2 Cup (8 tbs) (Juice from 2 lemons)|
|Black pepper||1/4 Teaspoon|
|For the lemon garlic sauce (made for 6||8 servings)|
|Garlic bulbs||3 Medium|
|Squeezed lemon juice||1/4 Cup (4 tbs) (Juice from one lemon)|
|Sea salt||1 Teaspoon|
|Cold pressed olive oil||1 Tablespoon|
To marinate the chicken:
1. In a large mixing bowl, rub the chicken fillets with all the ingredients for the marinade. Set aside to marinate for about 20 - 60 minutes.
To prepare the lemon garlic sauce:
2. Meanwhile, into a blender, add garlic cloves (from 3 garlic bulbs), fresh lemon juice, a drizzle of olive oil and sea salt. Blend until smooth, transfer to a bowl and set aside.
3. Place the marinated chicken fillets on a heated grill, let cook (flipping sides) until both sides are done as desired.
4. Serve the spicy BBQ chicken over a bed of cucumbers and tomatoes topped with sliced avocado and the flavorful garlic lemon sauce.
You may make a little extra of the lemon garlic sauce and freeze some of it, as it blends better when you make a little more.
