Polio alla Cacciatore (Chicken Hunter Style)
|Frying chicken||4 Pound|
|Flour||1⁄2 Cup (8 tbs)|
|Chicken broth||1 Cup (16 tbs)|
|Coarsely chopped peeled tomatoes/1 cup canned tomatoes||1 Cup (16 tbs)|
|Whole onions||6 Small|
|Garlic||1 Clove (5 gm)|
|Mushrooms||1 Cup (16 tbs)|
|Chopped parsley||1 Tablespoon|
Roll chicken pieces in a mixture of flour and salt.
Brown on all sides in hot butter or margarine and oil in large skillet.
Add remaining ingredients, except mushrooms and parsley.
Cover, and simmer slowly 1 hour.
Add mushrooms and, if more moisture is needed, extra chicken broth or a little dry white wine.
Cover, and cook 15 minutes longer or until chicken is very tender.
Garnish with parsley.
