Chicken Curry Low Fat Balti

A sweet tasting Chicken Curry Balti that's really simple and quick to make. With a really creamy sauce thanks to the Crème Fraiche.
Ingredients
  Chicken breast 500 Gram, cut into cubes
  Onion 1 Large, sliced
  Sugar 2 Tablespoon
  Garlic 2 Clove (10 gm), finely chop
  Oil 2 Teaspoon
  Garam masala 1 Teaspoon
  Fenugreek 1 Teaspoon
  Creme fraiche 200 Milliliter
  Cherry tomatoes 200 Gram
  Bay leaf 1
  Star anise 1
  Chicken bouillon cubes 1
  Fresh mint 2 Tablespoon, chopped finely
  Fresh coriander 2 Tablespoon, chopped finely
  Curry powder 1 Tablespoon
  Vinegar 1 Teaspoon
  Rice 1 Cup (16 tbs)
Directions

MAKING
1.In a sauce pan, pour some oil and add the onions, garlic and sugar and stir for 2 minutes.
2.Add the chicken into the same pan and stir for 3 minutes.
3.Season with garam masala, fenugreek and stir until the chicken is cooked.
4.Pour in the Crème Fraiche, cherry tomatoes, crumbled chicken stock and add boiling water into the pan until the contents are completely submerged.
5.Add the bay leaf and star anise and leave to simmer for 25 minutes.
6.Meanwhile, prepare your curry paste by mixing the curry powder and vinegar together.
7.In another pot, cook some rice.
8.After 25 minutes of the chicken cooking in the sauce pan, add the curry paste to it.
9.Garnish with mint and coriander and give it a good stir.

SERVING
10.This chicken balti low in fat makes for a perfect dish to be served with plain rice.
