Curried Baked Chicken With Coconut
|Broiler fryer chicken||2 1⁄2 Pound|
|Curry sauce||2 1⁄3 Cup (37.33 tbs)|
|Coconut||1 Cup (16 tbs)|
Wash and dry pieces of chicken. Mix flour, salt, and pepper together. Dust chicken with flour mixture, and place pieces in shallow roasting pan. Dot with butter. Bake at 500 degrees F. for 20 minutes, then at 350 degrees F. for 15 minutes longer. Remove from oven. Pour Curry Sauce over chicken; sprinkle with coconut. Return to oven, and continue to bake 20 to 30 minutes longer, or until tender.
