Sarasota Chicken

I just love this dish! It's a bit like a deconstructed Chicken Cordon Bleu which simply means it tastes just great, still looks like you slaved away in the kitchen, but is much easier to prepare. Shhhh, let's keep that our little secret!
Ingredients
  Boneless skinless chicken breasts 3 Medium
  Flour 1 Cup (16 tbs)
  Eggs 2 Medium
  Bread crumbs 1 Cup (16 tbs)
  Olive oil 2 Tablespoon
  Butter 2 Tablespoon
  Prosciutto 6 Slices
  Tomatos 3 Slices
  Cheese provolone 3 Slices
Directions

GETTING READY
1. Pound the chicken slices to make them of even thickness.

MAKING
2.Dip the chicken pieces in the flour.
3.Dip it in egg wash and then dip in the seasoned bread crumbs.
4.In a pan Sauté the chicken with olive oil and butter mix .
5.Heat until lightly browned on both sides or until cooked.
6.Transfer the chicken to an oven dish and place prosciutto, tomato slices and provolone cheese on top.
7.Place this under the broiler till the cheese melts.

SERVING
8.Display the pieces on a fancy serving platter and serve hot.
