Chicken Scampi

A healthy, diabetes-friendly chicken dish.
Ingredients
  Olive oil 2 Tablespoon
  Butter 2 Tablespoon
  Red bell pepper 4 Cup (64 tbs), sliced
  Boneless and skinless chicken breasts 4 Ounce, cut into bite size pieces
  White wine 1⁄2 Cup (8 tbs)
  Chicken stock 1⁄2 Cup (8 tbs)
  Lemon juice 4 Tablespoon
Directions

MAKING
1. In a skillet, heat oil and butter to sauté bell pepper until crisp but tender.
2. Add in the chicken pieces and cook for 8-10 minutes until the chicken is cooked through.
3. When the chicken is cooked, pour in the wine, chicken stock and lemon juice; simmer for 3-4 minutes.

SERVING
4. Serve Low Carb Chicken Scampi over pesto or over a bed of rice for a delicious and healthy meal.
