1. In a skillet, heat oil and butter to sauté bell pepper until crisp but tender.
2. Add in the chicken pieces and cook for 8-10 minutes until the chicken is cooked through.
3. When the chicken is cooked, pour in the wine, chicken stock and lemon juice; simmer for 3-4 minutes.
4. Serve Low Carb Chicken Scampi over pesto or over a bed of rice for a delicious and healthy meal.
