Baked Chicken Gumbo
|Flour||3⁄4 Cup (12 tbs)|
|Shortening||1⁄2 Cup (8 tbs)|
|Sliced okra||4 Cup (64 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Cooked tomatoes||1 1⁄2 Cup (24 tbs)|
|Cooked rice||1 1⁄2 Cup (24 tbs)|
Sprinkle chicken with salt and pepper.
Dredge with flour.
Melt shortening in large skillet; cook chicken until brown.
Remove chicken; place in 12 x 14-inch baking pan.
Brown onion in remaining fat in skillet.
Add okra and green pepper; simmer for 5 minutes.
Pour over chicken; add tomatoes and 3 cups boiling water.
Bake in 300-degree oven for 1 hour or until chicken is tender; add rice just before serving.
