Hawaiian Style Broiled Chicken

This recipe is from HolidaysCentral's 2012 Oscar's Best Picture Inspired Menu, where you can get the full menu and other fun holiday ideas. Best Movie Nominee, The Descendent takes place in Hawaii. While you may not be able to bring Hawaiian weather to your home, you can certainly bring the flavors. If you like that sweet-meets-salt taste, this dish will transport your taste buds to the Aloha State.
  Broiler chicken 2 , halves (2 pound each)
  Salt and pepper 1
  Pineapple 1 Medium, sliced
  Peach 1 Medium, halves
  Butter 1⁄2 Cup (8 tbs)
  Cornstarch 1 Teaspoon
  Lemon 1 Teaspoon, peeling
  Lemon juice 1⁄4 Cup (4 tbs)
  Pineapple juice 1⁄3 Cup (5.33 tbs)
  Onion 2 Tablespoon, finley chopped
  Soy sauce 1 Teaspoon
  Thyme 1⁄4 Teaspoon

Combine ingredients for Pineapple Sauce and set aside.

Brush chicken halves with melted butter and season to taste. Place skin side down on broiler pan. Broil 7 inches from heat for 25 minutes or until light golden brown, brushing occasionally with more butter throughout cooking. Turn chickens and continue broiling for 15-20 minutes. When there is 10 minutes of cook time remaining remove from oven, garnish with pineapple and peaches around the outside of chicken. Brush entire dish with pineapple sauce and continue cooking for 10 minutes. Serve chicken and fruit over a bed of hot rice.
