Healthy Chicken and Brown Rice Casserole
|Cooked chicken||1 Cup (16 tbs), skinned and cubed|
|Cooked brown rice||2 Cup (32 tbs)|
|Zucchini||2 , unpeeled and cut into bite-sized pieces|
|Frozen spinach||2 Cup (32 tbs), defrosted, drained & chopped|
|Onion powder||1⁄2 Teaspoon|
|Sherry||1 Cup (16 tbs)|
1) Preheat oven to 350° F.
2) Take a bowl and mix all ingredients in it except sherry.
3) Pour mixture into a baking dish.
4) Pour sherry over the entire mixture and bake for about 40 minutes.
5) Spoon out mixture on individual plates and serve immediately.
