Mock Chicken Fricassee
|Tripe||1 1⁄2 Pound (750 Grams)|
|White onions||2 Large (Whole Ones)|
|Chicken noodle soup||3 Ounce (1 Packet)|
|Milk||1⁄2 Cup (8 tbs)|
|Plain flour||2 Tablespoon, blended with a little cold milk|
|Cold water||2 Tablespoon|
|Cayenne pepper||1 Pinch|
|Parsley||1 Tablespoon, chopped|
1)After washing the tripe cut it into 1 cm (1/2 in) squares.
2)Place in a saucepan, cover with cold water and bring to the boil.
3)Drain it adding salt and onions, cover with fresh cold water, and simmer for 2 hours or until the tripe is tender.
4)Remove all but 1 1/2 cups of the cooking liquid.
5)Remove the onions, and chop them finely then replace in the saucepan with the tripe.
6)Simmer for 10 minutes adding chicken noodle soup and milk.
7)Let the minute boil by adding the blended flour to the contents of the saucepan cooking for 3 minutes.
8)Add butter, cayenne and chopped parsley.
9)Serve with triangles of dry toast.
