Moroccan Ras El Hanout Chicken Roast

Ras el hangout oven chicken recipe involves least use of heavy spices but uses all the fresh spices which has a wonder strong flavor and aroma. There are less fats and more taste.
  Chicken 1 , cut in half
  Minced garlic 1 Teaspoon
  Chopped onion 1 Cup (16 tbs)
  Olive oil 1 Tablespoon
  Honey 1 Teaspoon
  Orange juice 1 Tablespoon
  Saffron 1 Pinch
  Cardamom 1 Dash
  Chili pepper 1
  Cinnamon 1 Teaspoon
  Peppercorn 4
  Coriander 1 Teaspoon
  Nutmeg 1 Teaspoon
  Clove 1
  Cumin 1 Teaspoon
  Turmeric 1 Teaspoon
  Allspice 1 Teaspoon
  Ginger powder 1⁄2 Teaspoon
  Salt To Taste

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a bowl, combine garlic, onion, olive oil, honey, orange juice, and a pinch of saffron.
3. Mix them well.
4. With a mortar and pestle, grind cardamom, chili pepper, cinnamon, peppercorn, coriander, nutmeg, clove, cumin, turmeric, allspice, salt, and ginger powder.
5. Place chicken in a plate.
6. Coat with saffron mixture.
7. Apply rub over chicken.
8. Set chicken on a rack.
9. Pour the remaining saffron mixture/rub over chicken.
10. Place rack in the oven and bake for an hour.
11. Turn once.
12. Serve.
