Jig-Time Chicken Supper
|Dressed frying chicken||3 1⁄2 Pound, cut into pieces|
|Corn meal||1⁄3 Cup (5.33 tbs)|
|Flour||1⁄3 Cup (5.33 tbs)|
|Celery salt||1⁄2 Teaspoon|
|Sweet potatoes||4 Medium (Pared)|
|Powdered allspice||1⁄8 Teaspoon|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Melted butter/Margarine||2 Tablespoon, melted|
|Lemon juice||1 Tablespoon|
Shake chicken pieces in a paper bag containing a combination of corn meal, flour, 1 teaspoon salt, celery salt and pepper.
Heat shortening in pressure cooker over medium heat and fry chicken to an even golden brown.
Place sweet potatoes on an 18" square of aluminum foil.
Arrange pineapple slices over them.
Sprinkle with spices, sugar, remaining teaspoon salt and drizzle with melted butter.
Pull edges of aluminum foil up and twist together making a tightly sealed package.
Slip rack under chicken, sprin- kle with lemon juice and add 1/2 cup water and foil package.
Cover and cook at 15 pounds pressure for 15 minutes.
Let pres- sure reduce gradually.
